Soy croquettes. An exquisite and healthy recipe


What kids don't like croquettes? Very few, right? Surely many children are going to love the croquettes that we propose on this occasion. They carry soy and some very well ‘masked’ vegetables, so that children who do not like vegetables will not notice them. Besides being healthy and nutritious, they are very rich in flavor.

This is a good time to introduce soy in the diet of children. Soy, as many already know, is a legume with many nutritional properties that provides high-quality proteins to children.   • 250 gr. textured soy
  • 2 cups of soy milk
  • 1/2 cup whole wheat flour
  • 2 leeks
  • 1 onions
  • ½ red pepper
  • 1 carrot
  • 1 sticks of celery
  • Nutmeg
  • Salt and oil

1- Soak the soybeans (with twice as much water) for an hour, so that it hydrates.

2- Chop (if you can grate them, the better) the leeks, onion, pepper, carrot and celery, and bring everything to a simmer with oil, for half an hour or until done.

3- Add the drained soybeans to the fried vegetables and let them rest for about 15 minutes.

4- After this time, return the mixture to the simmer, add the flour, milk, a little grated nutmeg and salt. Beat everything with a whisk so that everything is mixed very well, and a thick dough is obtained.

5- Remove from the heat and reserve the dough until it cools.

6- Next, shape the croquettes. Pass them through the beaten egg and breadcrumbs, and fry them in hot oil.

7- If you do not want to fry them, you can make them in the oven, in a source previously greased with oil. It would take about 15 minutes to be ready.

8- You can accompany the croquettes with a light salad, with brown rice or with a light tomato sauce. We have chosen a very soft mayonnaise.
